optimal maturity
During the last two weeks of August, as the grapes near maturity, samples are taken from each plot of vines once or twice a week in order to closely monitor the evolution of acidity, the concentration of sugar and of polyphenols. The goal is to perfectly pinpoint, parcel by parcel, the optimal maturity - the moment when it is most propitious to start the harvest.
This generally begins very early in the season and takes very little time: during the early days of September nearly 140 workers harvest - by hand, of course - all of the grapes of the domaine in one continuous operation.
