To allow each different "profile" to express the best it has to offer, red wines are not all treated in the same manner.
Thus, wines rich in tannins are matured in barrels because the barrel is the ideal recipient for the maturing of tannins by micro oxygenation through the pores of the wood. Wines with a predominance of Grenache, a grape variety that tends to oxidize easily, are vinified in large tronconique (truncated) wood tanks or in barrels of 50 hectoliters.
