When the evolution of the wine seems complete, it's finally time for tasting to determine the blend. Choices are made as to which cuvées will go into the composition of the white Château de la Nerthe, the red Château la Nerthe, and the second wine of the domaine, the Granières de la Nerthe. Once the quality has been judged to be worthy, one part of the vintage is set aside for two exceptional cuvées : the "Cuvée des Cadettes" and the "Clos de Beauvenir", created by Joseph Ducos.

bottling
For more than two centuries, Château de La Nerthe wines have been bottled at the domaine. Bottling is now done under vacuum once the wine reaches perfect maturity.
For both reds and whites, the entire harvest is now bottled at one time to guarantee consistency from one bottle to the next.
Bottles remain in a vertical position long enough to allow the cork the time to insure an air-tight seal; they are then laid down and stocked in underground cellars.
